The Guji Zone is a remote forested area of Ethiopia, where in the western hills lies Buku Sayisa, a washing station known for it's highest quality natural process coffees. Local cherries are grown at 2300 meters with heirloom cultivars here, and at Buku Sayisa the coffee speaks of the intense work put into every lot. The attention to detail in the drying of natural coffees has the potential to build amazing and rich flavor profiles, as has been done here.
